There probably is some loss of Vitamin C when cooking rose hips, just as there are loss of any vitamins/minerals when you cook any fresh foods. I looked into it a bit more, though, and found this article (linked below) that talks a bit more about specifically how much Vit C is lost in creating rose hip syrup. It looks like it’s a relatively small amount lost- 15% or less. So still plenty of Vitamin C remains in the syrup after it is cooked. What seems to make more of a difference in the Vit C content is the condition of the hips when they’re harvested. If they’re pale in color or too ripe, they won’t offer as many nutrients. It’s possible to eat the rose hips fresh if you prefer, but make sure to remove the fuzzy seeds from inside first as they can cause irritation in the digestive tract (or so they say. I’ve never attempted it, so I can’t say for sure lol!).

We have 8 trees and we just started harvesting and preserving this week. I freeze and can applesauce as space allows. So far 4 quarts canned, 8 pints frozen. I dry chips as well and have many weeks of that to go. Try a “puffy” apple pancake or Dutch apple pancake. The name varies, but it is basically the apple pancake they sell at The Original House of Pancakes. Very easy to make and tasty.

State parks usually don’t charge admission before Memorial Day or after Labor Day so this is a great time to go. Great weather and no crowds!
